Classic Pesto Sauce

Classic Pesto recipe with fresh basil leaves, pine nuts, garlic, Parmesan cheese and extra virgin olive oil.

The pesto has an irresistible smell and its flavor is really rich, in fact it is prepared with fresh basil, which represents the main ingredient, grated Parmesan cheese, oil, garlic and pine nuts/almonds. Pesto can be prepared to be consumed immediately, or you can store it in the fridge. If you have a good supply of basil, you can also freeze it.

Traditionally the Pesto is prepared with the use of a marble mortar and pestle but for convenience today it is prepared with a blender, being careful not to use a high a speed to not oxidise the leaves and obtain a dark green pesto colour. We can even find the first traces of this delicious sauce in the 19th century and since then, the pesto recipe has always remained the same.

Equipment

  • food processor

Ingredients

  • 100 g basil leaves
  • 40 g pine nuts
  • 100 g Parmesan cheese
  • 1 garlic clove
  • pinch of salt

Instructions

  • Place the basil leaves and pine nuts into a food processor and pulse several┬átimes. Add the garlic and Parmesan cheese and pulse. Scrape down the sides of the food processor with a spatula.
  • While the food processor is running, slowly add the olive oil. Stir in the salt.
